If, as theists say, evolution is guesswork and supposition, and "we weren't there" to see it, then?

why can't we apply the same logic to the bible. Evolutionary theory on one hand, even if guesswork and supposition still has not been falisifed--that is--tenets of the theory can't be proven wrong by direct evidence. Now--applying the same thing to the bible--we find the global flood is falisifiable by literally thousands of pounds of data and appears to be plagarized from the sumerian epic of gilgamesh, the story of exodous, for exsample, has no basis in historical fact--in fact--the moses character was obviously plagarized from the much earlier sumerian king sargon myth--the tower of babel is not supported by linguistics. So--we have evolutionary theory--even if guesswork and supposition--is not falisifiable--but when we apply the same criteria to your bible--we find the bible is indeed falisfiable. Thus evolutionary theory would still stand as the best estimate of how we got here, would it not?
