How can I be Luigi in Super Mario Brothers? Super Nintendo?

I Have super mario bros all stars for Super Nintendo, How can I play as Luigi in either the original super mario bros or in super mario 3? I know you can be him in a two player game, but can you play a one player game as Luigi?
